Easy Potato Pancake


1 c. mashed potatoes (make it from scratch or use instant)
1/2 c. flour (use whole wheat flour for additional nutrients)
2 tbsp. baking powder
2 eggs, beaten
1/2 tsp. salt
Pepper to taste

Combine the ingredients. Form into pancake size patties. Fry on both sides until golden brown.
(mash some boiled carrots and put it into the mix for kids who don't like veggies)
(add sauteed onions for additional flavor)
